Enjoy a delightful morning making homemade pizza with Diana, who will guide you through each step of the process while sharing her extensive knowledge about the importance of flour in creating the perfect pizza dough. As you roll up your sleeves and prepare to dive into the art of pizza-making, Diana will explain the various types of flour used by traditional "pizzaioli" in Italy, emphasizing how each type contributes to the texture and flavor of the final product.


She will introduce you to "00" flour, a finely milled Italian flour that is renowned for its high protein content and low ash, making it ideal for achieving that sought-after chewy crust. Diana will demonstrate how the quality of flour affects gluten development, which is crucial for the dough's elasticity and ability to rise. As you mix and knead the dough together, she will share tips on how to achieve the perfect consistency, ensuring that your dough is neither too sticky nor too dry.


Throughout the morning, you will learn about the historical significance of pizza in Italian culture and how the craft of pizza-making has been passed down through generations. Diana will regale you with stories of her own experiences in Italy, where she observed skilled pizzaioli at work, tossing the dough high in the air and expertly layering on fresh ingredients. You will discover the importance of using high-quality, locally sourced ingredients, from the tomatoes to the mozzarella, and how these choices reflect the pride and passion that Italians have for their cuisine.


As the aroma of baking pizza fills the air, you will not only enjoy the fruits of your labor but also gain a deeper appreciation for the artistry involved in making authentic Italian pizza. By the end of your session with Diana, you will leave not only with a delicious homemade pizza to savor but also with a wealth of knowledge about the essential role of flour and the traditions of the pizzaioli in Italy.

This workshop may be outdoors in the backyard if it is nice!  Be prepared to stand indoors or out.

 

MENU- Homemade pizza from scratch Fresh tomato bruschette. The class includes two hours hands cooking class, lunch, education material, recipes and lots of fun! Perfect date or family experience. Feel free to bring a bottle of wine and your own drinks . Come hungry, lunch is included!

 

About Diana - Born and raised in a small town in Northern Italy between the Como lake and Milan Diana lived there for most of her life. Her parents and her region helped her appreciate food ant the food culture, therefore her roots. Food has always been an important part of her life, and as every Italian, food is in all her conversations. She talks about dinner while making lunch and about lunch while making dinner!

After having moved in her 30s to Switzerland then to England, the Netherlands and to the States in 2017, she traveled back and forth during summer and Christmas and this allowed her to maintain her childhood friendships and the long life relationships.

Certified English as a Foreign Language teacher, she has a true passion for teaching. Having lived in five different countries and speaking five foreign languages has allowed her to embrace different cultures incorporating them in my cooking classes.

Today, she teaches cooking all around Jacksonville: in-home cooking, breweries, restaurants, clubhouses, retail shops and private venues. Collaborates with several chefs, restaurants and local farms and. She recently added virtual cooking classes to her services to respond to the social distancing measures in place. She also teaches Italian and English as a foreign language online and has culinary tours in Italy twice a year. Her last one was October 2023 in Tuscany.

Her burning desire is to open a front store cooking studio one day, where she can showcase her Italian products while continuing educating and sharing her passion for Italy and her unique culture.
